In 2020, Negash founded his own washing station to fully control the process of his own coffee as well as small quantities from surrounding farms.\u003c\/div\u003e\n\u003cdiv class=\"x_elementToProof\"\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv class=\"x_elementToProof\"\u003eSitting at 2100masl, Negash's farm produces high quality 74110 and 74112 varietal coffee cherries, where they grow alongside bananas and avocados. The choice of varietal, coupled with the dedication to quality and control across all aspects of the cultivation has seen Negash recognized in the Cup of Excellence awards.\u003c\/div\u003e\n\u003cdiv class=\"x_elementToProof\"\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv class=\"x_elementToProof\"\u003eThe ripe cherries are hand picked, sorted and fully washed before drying on traditional raised beds for 10-12 days, where focus is on consistent and controlled drying to preserve quality and deliver optimal flavour development.\u003c\/div\u003e\n\u003cdiv class=\"x_elementToProof\"\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv class=\"x_elementToProof\"\u003eThe result is a clean, vibrant cup with light florals, a sweet cherry compote flavour and a soft black tea-like quality.
