This Pink Bourbon comes from the El Bombo Cooperative in Pitalito, Huila, Colombia, a group of more than 80 producers working together to bring their coffees to market. The producers are organic certified and work across small family farms, typically between 1 and 5 hectares, where ripe cherries are selectively handpicked, fermented for 12–36 hours and fully washed before being dried on patios, raised beds and in marquesinas. The result is a beautifully clean and expressive coffee that really lets the Pink Bourbon variety shine.\u003c\/p\u003e\n\u003cp\u003eIn the cup, we’re tasting white guava, nectarine and Meyer lemon, with a bright, juicy acidity and a delicate sweetness throughout. It’s the kind of coffee that we love to drink slowly and watch change as it cools. We recommend brewing this one as a drip coffee to really let those fruit-forward flavours come through.
